Elderflower cordial recipe
Note: Elderflowers are only in season for a short time, usually in May
Ingredients
- 25 elderflower heads
- 1.75 kgs sugar (experiment with quantity to get the right balance for your taste.)
- 1.75 ltrs boiled water (cooled)
- 50g tartaric acid
- 2 lemons, sliced
Put all the ingredients in a large food container, cover and leave for 24hrs, stirring occasionally. Strain off into sterilized bottles.
Serve diluted with mineral water.
An alternative storage method is to make into ice cubes.
The flavour should be flowery, fairly sweet, but with a touch of acidity
